Shallots & Apple Cider Vinaigrette
Given that salt and vinegar is one of my favorite chip flavors, this would undoubtedly be my favorite of the three. While the first fragrance is unmistakably salty and vinegary, the taste is not quite as intense. The apple cider adds tanginess, and I thought it was interesting to label it vinaigrette, since the flavor does resemble salad dressing rather than plain vinegar. The shallots, which provide a savory counterpoint to the tanginess of the apple cider vinegar, also provide pleasant garlic notes. Grinshpan recommends combining with blue cheeses (stilton or gorgonzola), gruyère, or blossomed goat's cheese.
